Bitter gourd Curry |
As the name itself suggests the bitterness of the vegetable, many hesitate to try this in their cooking and many others try different tips and tricks to remove the bitterness from this. Bitter gourd is an excellent source of vitamins, folic acid,calcium ,iron and high in fiber. It lowers the blood sugar levels in diabetic patients. Although Everyone know the nutritive values of this the bitterness keeps them away from it.
Now, I came with a recipe which everyone would love to eat with no bitter taste in their mouth. To off set the bitter taste I added sugar. If you are the first time users of the vegetable try this trick . Scrape out the outer layer of bitter guard cut to small pieces add a teaspoon of salt and sugar , leave for 30 minutes squeeze out the water , wash the pieces and use it for the curry.
Discard the seeds if they are too hard.
INGREDIENTS
- Bitter gourd 5nos
- Salt to taste
- Sugar 1 tsp
- Red chilli powder 1/2 Tsp
- Jeera 1tsp
- Turmeric a pinch
- Hing a pinch
- Besan 3 Tsp
- Rice flour 2Tsp
- Oil 4 Tsp
- Cashew nuts 15
- Curry leaves a few
Cut the bitter gourd into small pieces , add the remaining ingredients except oil and mix well. Heat the oil in a pan and add the above mixture and fry the pieces on a medium flame. If needed add more of oil and continue frying till all the curry turns golden brown. Serve with steamed rice and ghee. Believe me or not this curry tastes awesome and u can't believe it is bitter gourd.
TIPS
- To enhance the taste add chopped onions ,sauté them and then add the mixture.
- Be liberal in adding oil so the the curry turns out to be a hit.
- Remove the seeds and scrape the outer layer to completely remove the bitterness. However eating bitter things once a while is good for health.
