BADAM BARFI

Badam barfi is one such sweet which is healthy, nutritious. It contains less of ghee and so if you are health conscious and cannot resist eating sweets opt for badam barfi. Almonds are rich in vitamin E and lowers LDL cholesterol when taken in small quantity. A few almonds taken during breakfast keeps the mind fresh throughout the day.
INGREDIENTS
  • Almonds                         1 cup
  • Sugar                              3/4 cup
  • Cardamom powder         1/2 tsp
  • Rose water                     1 tsp(optional)
  • Saffron                           a pinch(optional)
  • Milk                               1/4 cup(just to grind almonds)
  • Ghee                              1Tsp
PROCEDURE
Soak the almonds for 4 to 5 hrs in luke warm water. Peel the skin and grind the almonds, sugar , milk , rose water to a thick smooth paste. If required add more of milk to grind easily. Take a nonstick pan and add the ghee and the almond paste. Keep stirring continuously on a low flame. The mixture starts leaving the sides of pan after 20mins. Now add the cardamom powder and powdered saffron. Keep on stirring so until a soft dough which has  the consistency of chapathi dough is formed . Switch off the flame and transfer onto a plate and spread to a 1/2 inch round. Let cool for 20 minutes and cut into desired shape.
TIPS
  • If in a hurry, microwave almonds in a bowl of water on high for 2 mins and they are ready to be peeled
  • For the first time makers the barfi may not turn well and may remain sticky even after cooling don't worry.....add some almond powder into the final product and roll with a rolling pin and cut desired shape.
  • If almond powder is not ready add the cashew powder(cashews powdered in mixer).
